I find photographing in black & white to be especially rewarding.  With the color dimension removed, the resulting images emphasize form and structure that can be easily overwhelmed by bold colors.  I ordinarily shoot B&W images with a Nikon Zf camera body, which has a black & white mode.  I also sometimes use an infrared Nikon D7100 to achieve deep blacks and bold whites.  And, in the digital darkroom, any color photo can be easily converted to black & white.
